Chicken Enchilada Quinoa Bake

1. Preheat oven to 400 degrees 2. Slice sweet potatoes into "fries" (we use a vegetable chopper) 3. Place sliced sweet potatoes on a cookie sheet (in one layer) 4. Melt coconut oil in microwave 5. Drizzle sweet potatoes with coconut oil and cinnamon 6. Bake for 15-20 minutes 7. Flip sweet potatoes and bake for another 15-20 minutes
